Towering Pastry

   This is certainly the largest assembly of pastry that I have seen.  The French call it a "piece montee", which is always offered in French wedding receptions, albeit not this big!  This was taken in Ecole Ferrandi's pastry lab where future patissiers are trained.  They also offer couses for adults, who just want to expand their pastry skills .
